Why did Laura say she'd see Cooper in 25 years if he visits her shorty after his trial in Episode 30? Is she just making a joke about his estimation in an earlier episode?

I believe the idea for Twin Peaks was conceived in 1987. Add 25 years and the year is 2012.

The "European pilot" says 25 years later when the scene that later became Cooper's dream in episode 2 begins.

Well we don;t know what the time period was in the lodge when they meet in FWWM. For all we know time sped up to a point where it was 25 years form the last episode to FWWM. The only difference is that Cooper didn't age.
We're also assuming that's the good Cooper that is with her in FWWM. That's what I love about the world of Twin Peaks. It's such an open universe that practically ANYTHING and EVERYTHING can happen in it.
