I was watching the pilot and Bobby is taking Shelley home early in the morning.

I didn't realize they got that much business to stay open 24 hours in their little neck of the woods.

Not 24 hours, we saw a scene with the Diner closed, when Jonathan beats up Hank... And the Shelly discrepancy was explained perfectly by Geoff recently, the thread must be still around... She probably made the 5AM-9AM shift...

Also, there's a exterior shot that's used a couple of times (like when Maddy is killed) of the darkened RR and it's vacant parking lot. 

The real RR (Twede's) is located is a sleepy little backwater, too, where even the bars close early.  It's open til 9 on Saturdays, 7 on Sundays and 8 the rest of the week.
